Sweet Potato Souffle

Ingredients: 

  • 5-6 medium sweet potatoes

  • ½ stick butter, softened

  • ½ - ¾ c condensed milk

  • ¾ c brown sugar

  • ¼ c sugar

  • 2 tsp cinnamon

  • 1 tsp nutmeg

  • Pinch of cloves

  • Pinch or two of salt

  • 1 tsp vanilla

  • 2-3 tbsp milk

  • 2-3 tbsp orange juice

  • Zest of half an orange

  • 1 egg

  • Marshmallows for topping


Directions: 

  1. Preheat oven to 375°F. Bake sweet potatoes for 45-60 minutes until fork tender. Once done, peel the skin and place potatoes in a large mixing bowl.

  2. Preheat oven to 350°F.

  3. In the mixing bowl, add butter and condensed milk first and mix. Then add brown sugar, sugar, cinnamon, nutmeg, cloves, salt, vanilla, orange juice, orange zest, and milk one by one, mixing as you go.

  4. Add the egg last and mix until everything is well combined.

  5. Lightly butter a 9x13 baking dish. Pour the batter in and sprinkle a little brown sugar over the top.

  6. Bake for 10 minutes, then remove from oven and cover the top generously with marshmallows.

  7. Return to oven and bake for another 10-12 minutes until the marshmallows are golden and toasted on top.
